There are many reasons people give for not eating healthy. Yes, fast food is more convenient (depending on traffic) but no, fast food is not always cheaper. For instance, I made this tasty dish tonight and it cost me less than $20 TOTAL and made enough for 6 meals.
I know I started with a recipe at one point but now I just throw together whatever sounds good. Here I used:
- 1.25 pounds of lean ground beef (93% lean)
- 3/4 c. brown rice
- 2 green bell peppers
- 1 red bell pepper
- 3/4 of a white onion
- 15 oz. can black beans
- 15 oz. can diced tomatoes,
- 8.5 oz. can whole kernel corn
- 2 Tbsp. taco seasoning
- A pinch of salt and pepper
I cooked the ground beef and drained the excess fat, sautéed the peppers and onion in a little bit of extra virgin olive oil, cooked the rice in the microwave, and then combined everything into one skillet where I let it simmer for a little while.
While I already had some of the ingredients left over from previous makings of this recipe (brown rice, taco seasoning, salt and pepper), everything else I purchased today for $16.85. This made enough food for tonight’s dinner, lunch the rest of the week, and a bit more that I froze to eat next week.
So each meal cost roughly $3.00. It’s delicious, nutritious, and easy to pack in my lunch box to take to work the rest of the week. I eat it plain or I add some shredded cheese and/or guacamole to mix things up and add extra flavor. The worst part about cooking for me is having to clean up afterwards. But in reality it didn’t take me long to wash the dishes and now I don’t have to cook for the rest of the week!
