I love pumpkin baked goods! I have even tried branching out into savory pumpkin dishes (more on that later this month). The first pumpkin recipe I would like to highlight this month is this Pumpkin Spice Baked Oatmeal Cups recipe (from Pinterest of course!).
I followed the recipe and mixed all the ingredients in a large bowl:
The recipe said chocolate chips were optional but of course I was going to put chocolate chips in them! Everything is better with chocolate. But… I got so excited about taking the pictures that I forgot to put the chocolate chips in! Dang it. I tried last minute to push a few chocolate chips into some of the cups but I didn’t want to mess up how good they looked.
They turned out pretty good but definitely would’ve been better with more chocolate chips!
So… a few days later I made a second batch since I had leftover ingredients and I really thought they would be so much better with chocolate (and I had new photo props to try!)
They are SO much better with chocolate chips! Yum!
I ate the whole batch in just a few days. The recipe ended up making 11 cups so here is the nutritional breakdown (minus the chocolate chips) based on that number:

One final note: The first batch I made I put the leftovers in a tupperware container and left on the kitchen counter. Within 2 days, they were covered in mold! Yikes. So when I made the second batch, I put them in a tupperware container and then put them in the fridge. Much better! I just had to heat them for 20-30 seconds in the microwave before enjoying with a tall glass of milk.
These are great for part of a morning breakfast, a snack, or even as a dessert! Enjoy!
